Wheat Berries


Have you had this as a side salad or a meal?? It's so filling. If you're not familiar with wheat berries, it's the kernel part of the wheat. It has so many vitamins and fiber. It's so good for you (unless you're doing the gluten free thing). Basically you buy this in the bulk section. I know Henry's has it. You don't need a lot, maybe 1/4 to 1/2 a cup. Add 4 times the amount of water to the berries. Cook covered on the stove for 1 hour or until tender. Cool it down by running cold water. Then you just add all kinds of stuff to it and it makes a great salad. I like to add the following:

olive oil
cucumbers - diced
olives - black or kalamata
feta cheese - organic, please
roasted red peppers &/or sundried tomatoes
red onion - diced
herbs - salt - pepper - squeeze of 1/2 lemon

You can keep it simple or add a bunch of stuff, but it's yummy. BTW, I'm not good with measurements, so just add to your own liking.
